How to Brew Coffee with a Kalita Wave

With its stainless steel body and wavy contours, the Kalita Wave wins over coffee and design enthusiasts alike. It's a favorite pour-over for home and it's great on the go, too. The flat-bottom filter and three-hole base promote an even extraction, which makes this one of the more forgiving brewers out there. The key to mastering this brewer is the slow spiral pour.

Follow along step by step and see how it comes together

  1. Prep and preheat
    Fill your kettle with filtered water and heat it to just off the boil (about 205°F). Set the Kalita Wave on top of your mug or carafe and drop in a Wave filter. Rinse the filter with hot water to wash out any papery taste and warm up the dripper, then pour out the rinse water.
  2. Weigh and grind coffee
    Measure out 21g (about 3 Tablespoons) of your favorite Stumptown coffee and grind it medium-fine around the texture of sea salt. Add the grounds to the filter and shake gently to level them. Zero your scale if you're using one.
  3. Saturate and bloom
    Start a count-up timer when you add the hot water. Pour 60g over the dry grounds in the first 10 seconds, saturating them completely, and let the coffee bloom. Give it a gentle stir so no grounds stay dry.
  4. Second pour
    At 0:45, pour in a slow spiral up to 200g, finishing by 1:00. The spiral keeps everything evenly saturated and integrated.
  5. Pulse and wait
    Over the next minute, add small pulses of water (about 25 to 50g at a time) until you reach 345g by 2:00. Aim for the dark, drier spots and skip the lighter ones. Then let it draw down fully, finishing somewhere between 2:45 and 3:00.
  6. Serve and Enjoy
    Remove the Wave from your carafe or mug and serve!
